Basic syrup

One part palm sugar to one part hot water by weight: the base of the palm sugar iced latte.

The drink that made it famous

Es kopi susu gula aren.

In Indonesia, the iced coffee with milk and palm sugar syrup, es kopi susu gula aren, grew from a street-cafe drink into the signature item of the big coffee chains. Its taste comes from arenga palm sugar: a caramel and toffee sweetness that rounds off espresso without hiding it.

The same idea now appears on menus abroad as the palm sugar latte. For a cafe it is a simple drink to add: one syrup, the espresso and milk you already have, and a flavor that customers notice.

Arenga palm sugar comes from the sap of the sugar palm, Arenga pinnata, tapped by hand in Sumatra and Java, boiled down and dried into granules. Nothing is added. More on how it is made.

Making the syrup

Most cafes prepare palm sugar syrup in the morning and keep it chilled at the bar. These are common starting points; adjust to your menu.

Standard syrup, 1:1

Dissolve 1 kg palm sugar in 1 kg (1 litre) hot water. Bring just to a simmer, stir until clear, strain while warm and chill. Easy to pump and to dose.

Rich syrup, 2:1

2 kg palm sugar to 1 kg water gives a thicker syrup with a stronger caramel note. It keeps longer and you use less per drink.

Some Indonesian cafes simmer a knotted pandan leaf or a pinch of salt with the syrup. Both are optional and change the flavor; label them on your menu if you use them.

Typical doses for a 250 ml drink with 1:1 syrup.

For beverage and syrup manufacturers

Points to check when palm sugar goes into a production line.

  • Dissolve warm, then filter

Dissolve in warm water during batching. As an unrefined sugar it can carry a little natural insoluble matter, so include a filter or fine strainer before filling.

  • Heat darkens the color

Reducing sugars brown during pasteurization, UHT or retort. Expect the drink to come out a shade darker than the bench sample and set your color standard after a pilot run.

  • Dose by weight and Brix

With total sugar above 90%, palm sugar sweetens close to cane sugar by weight. Check Brix on each syrup batch rather than relying on volume.

  • Labeling

The ingredient is 100% arenga palm sugar, often declared as palm sugar. Naming rules differ by country, so check the declaration with your regulatory team.

Which granulation

Mesh is the number of sieve openings per inch; higher means finer.

Granulation by beverage use
UseSuggested mesh
Syrup made in-house or in a factoryStandard mesh 16 to 20; it all dissolves
Stirred into hot coffee at the tableMesh 18 to 20, dissolves within a few stirs
Dry beverage premixes and instant drinksFiner milling up to mesh 22, on request

Questions from beverage buyers

  • Slowly. Granules dissolve quickly in hot coffee, but in cold milk they sink. For iced drinks, make a syrup first: 1 part sugar to 1 part hot water by weight, then chill.

  • A 1:1 syrup kept covered in the fridge is usually used within about a week. A richer 2:1 syrup keeps longer. Label each batch with the date it was made and follow your own food safety plan.

  • Palm sugar is unrefined, so it can carry a small amount of natural insoluble matter from the sap. Strain the syrup through a fine sieve or cloth while it is still warm.

  • Yes. 1 kg pouches and 5 g stick packs can carry your design (OEM). Tell us the pack size, quantity and artwork status when you request a quotation.

  • 5 MT per order, which can be split between bulk sacks and retail packs.

  • Yes. It has a milder caramel note and comes from a producer with EU and USDA Organic, HACCP and Halal. See coconut sugar.
